Turmeric and Ginger Veggie Fried Rice

This is one of those recipes you randomly throw-down and by sheer luck, turns out amazing.  White rice can be really boring at times and if you are a rice lover, this is an incredible way to spice things up.


You’ll need:

1 Cup of Basmati/Biryani/Any long grain rice

1 Medium-sized onion (cubed/sliced)

2 Large carrots (cubed)

1 Yellow and Red Pilipili Hoho  cubed (You can add a Green Pepper as well)

2 Cloves of Garlic (crushed)

Ginger and Turmeric pieces (Crushed)

Oil and salt to taste



When making fried rice, you want to avoid your rice being mushy and soggy. This is why its advisable to use long-grain rice.

In a large saucepan, bring to boil 1 and ¾ cups of water.  Add salt to taste and some cooking oil to prevent sticking. Once the water boils, add in the rice, stir and let it cook. Cover the sauce pan once all the water evaporates and switch off the heat.

Once your rice is cooked, the frying can now begin.

Heat oil in a non-stick pan, once hot, add in the onions and fry till slightly translucent. Add the garlic, turmeric and ginger paste and stir fry.

Now add in the carrots and stir. The secret to good veggie rice is to fry each ingredient individually.

Finally, sauté the bell peppers and sprinkle enough salt.

For the final step, add your boiled rice and mix it into the vegetables well. Stir fry for about 5 minutes and serve.


NB// To spice thing up some more, you can add some black pepper or fresh chillies.

This recipe is also an excellent way of utilizing left over rice. Enjoy on its own or serve with a stew of your choice
