How to Make Potato Pancakes

So I got this recipe from Food Wishes, one among the gazillion cooking channels I follow on Youtube.  For anyone interested in learning how to cook, I’d highly recommend it.   Most people dread trying out new recipes because they are intimidated by the complicated procedures and ingredients that most food bloggers tend to use when posting recipes.  I like my cooking as simple as the alphabet

I had never thought Potato pancakes was even a feasible idea until I bumped on this recipe.   You will absolutely love them.

You’ll need:

5 Large/Medium sized Potatoes (Tweak the recipe quantities to suit the number of servings you’re aiming at)

1 Onion (White or Black)

2 Eggs

1 Clove of Garlic (or 2 if you love garlicky stuff)

½ a cup of plain wheat flour

Black pepper/ any seasoning of your choice

Salt to taste

Cooking oil (obviously)

The original recipe is as above. I however added chicken brawn and coriander to mine

Procedure

1 Peel you potatoes and wash them thoroughly. Now in a large bowl, finely grate the potatoes  using an ordinary carrot/ cheese grater.  After you’re done,  grate you onion and garlic and mix them in.

2 In a separate bowl, whip your eggs then pour it into the mixture. Fold in your eggs well.  Now add in the wheat flour a little at a time and give it a thorough whipping.

3 For the final step, add in the cubed chicken brawn and finely chopped coriander then season your potato-batter with black pepper, salt and any other condiment.

Fold in all your ingredients. Make sure your batter is all seasoned

4 Your batter is now ready for cooking

5 Heat oil in a pan, don’t be stingy nor too generous with it.

6 Once the oil is hot enough, pour or scoop the batter onto the pan. The sizes and shapes are totally up to you (Make sure your batter is not too thick otherwise your pancake won’t come out as crispy  or crunchy as they should)  Check to see if the bottom is browned then flip your pancakes over to the other side. Repeat the same process with the other pancakes.

Cook your pancakes on medium to high heat and be careful not to burn them

You can serve your potato pancakes as they are or as a side to your sausages, steak, bacon et al… If you have kids they will absolutely love these. Enjoy 🙂
