Ever had so many bananas in your kitchen and you’re wondering what to do with the black, overripe ones? Don’t throw them away. Here’s a quick and super easy recipe you can try out.
You’ll need:
3 Ripe bananas
1 Cup Self raising flour (Make your own using 1 cup wheat flour + 1 Tbs of baking powder)
1 Cup milk (Don’t fret if you don’t have milk, water will do just fine)
1 Egg
1 Tbs Sugar (This is completely unnecessary because of the sweet bananas; but some of us just love sugar)
A pinch of salt
Vanilla Essence (Optional)
Cooking oil (obviously! 🙂 )
Method
1 Mash the bananas in a bowl using a fork until they are all soft and mushy. (You can cheat by blending them)
2 Once you have your paste, add in the egg, vanialla essence , sugar and pinch of salt. Whisk.
3 Fold in the wheat flour, add milk until you attain your desired batter consistency. For thick fluffy pancakes, your batter should be heavy. The inverse is true.
4 Now that your batter is ready; heat your non-stick pan. Add little oil, once hot, pour in your batter using a ladle. Don’t spread out your batter using a spoon, otherwise your pancakes will be flat and lose their fluff.
5 Once the air bubbles begin forming on the surface, it’s time to flip it over. Cook the other side.
6 Repeat the process for the remaining pancakes.
You can serve the pancakes plain with tea, fruits or any other accompaniment of your choice.
I dusted mine with castor sugar and drizzled them with sugar syrup (death by fructose 😀 )
Pro-tip: Banana pancakes burn really fast so be sure use medium heat when cooking.
